Thịt cốt lết làm sạch, cắt mỏng, sau đó cho thịt lên màng bọc thực phẩm, đậy lại bằng miếng màng bọc khác, dùng dụng cụ đập cho miếng thịt mềm và mỏng ra. Ướp thịt cùng 1 ít muối.
Xếp thịt xông khói lên thớt sạch, trải thịt xông khói, lá xô thơm lên từng miếng thịt, dùng tăm ghim để cố định lại. Đun nóng dầu olibe, thả thịt cốt lết lên chiên áp chảo khoảng 1-2 phút mỗi mặt. Cho thêm bơ vào chảo.
Khi bơ đã tan chảy, bạn lấy cốt lết ra khỏi chảo, đảo đều bơ một lúc, sau đó cho thêm rượu trắng, khuấy thêm lần nữa. Tháo tăm tre ở miếng thịt cốt lết ra, cho thịt trở lại chảo, đảo cho sốt thấm đều, sau đó tắt bếp.
