Cắt nhỏ chocolate, đặt lên bát và đun cách thủy cho đến khi chocolate chảy hết, giữ ấm. Lưu ý không để nước rơi vào chocolate.
Cho 3 lòng đỏ trứng, 1 quả trứng cùng đường vào âu, đặt lên nồi nước sôi sao cho đáy âu không chạm vào nước, đánh trứng cho đến khi được một hỗn hợp sáng màu và đặc mịn (chừng 3-5 phút).
Đổ chocolate đã đun chảy vào hỗn hợp trứng, quấy đều cho tan. Cho kem tươi vào âu, đặt âu kem vào tủ lạnh 10-15' rồi lấy ra và đánh kem đến khi bông mềm. Thêm kem tươi đã đánh bông vào hỗn hợp chocolate ở trên, trộn đều.
Chuẩn bị khuôn (hình dáng tùy chọn). Lót bạt bánh vào khuôn, sau đó đổ một nửa hỗn hợp mousse lên, dàn đều. Lót bạt bánh thứ hai và đổ nốt nửa còn lại vào, dàn đều để mặt bánh được phẳng. Để tủ lạnh 3-5 tiếng trước khi dùng.
